Sausage making day

Wahoo! Harley didn’t want to get out of bed until 6:15 today. As a result, I was back asleep until 8:45. S slept until after 9 when his coffee was delivered to him in bed. The snow started lightly falling, with the temperature at -16 degrees Celsius. However, the snowfall was short-lived.

After getting a second cup of coffee, S started preparing for sausage making. He hauled in the tubs of meat and other ingredients. I had an iced coffee and finished writing yesterday’s blog post before getting the sausage grinder and stuffer out for him.

S began grinding the meat after 11:00 AM. There were many breaks to flip and move the still-frozen pieces. I had put out trays and tubs to sort the meat. We were working efficiently on this part of the process.

Once all the meat was ground, it was piled on the long side of the island and flattened out by S. Spices and garlic were sprinkled over the meat, along with warm water. S mixed everything together.


The stuffer was set up on the south end as usual, and the casing was put on the stuffer tube. I was the handle turner for the filled MANY times meat canister while S managed the actual sausage making. The sausage was cut into pieces, wrapped in butcher paper, and put in the freezer. Late in the afternoon, we cooked up a patty to taste test.

The last package was wrapped at 5:00 PM, over 6 hours after starting this intense, back-aggravating task. The remaining sausage meat was cooked up after cleaning out the stuffer. It was then cleanup time, leaving the last of the dishes for a bit.

We are hiring for positions for the next time we make sausage, with payment in sausage. What were my tasks that are up for grabs you ask? I was the all-around gopher, dishwasher, countertop cleaner, water pourer, spice dispenser, drink fetcher, intestine (aka casing) unraveller, stuffer handle turner, paper cutter, tape dispenser, sausage packager/wrapper/marker, freezer runner and arranger, and photographer to name a few :)

We headed out to soak in the hot tub to soothe our aching backs in -17 degrees Celsius, but with sunny skies. Harley also came out to enjoy her bison leg. Back inside, we finished the kitchen cleanup and had leftover wings. Sheldon must have said 50 times how happy he was that we completed this task to check off the list.

After 7 we kicked up our feet in bed and got the new series Prime Target underway. B and Coop were out after 8 bringing out HelloFresh box left at the gate. WTH! I had to contact them and request a refund as all produce was froze solid. It was back to the show to end our busy day.
